So without further ado, the first installment of Some Things Vegans Eat begins now...
Mini Quiches. The filling is a combination of tofu and chickpea flour, along with veggies. The crust on these was actually pasta dough, following a recipe from Vegan.
I can't remember if this was breakfast or brinner, but on the plate are creamy mushrooms, potatoes, a grilled tomato, wilted spinach and toast.
Tomatoey beans & greens with rice.
Deconstructed sushi -- sushi rice, nori pieces, avocado, capsicum and cucumber, dressed with pickled ginger and soy sauce. A perfect Sunday lunch, when we've got time to mess around in the kitchen making sushi rice and arranging salad plates.
Can we rename this, some things vegans would like to eat, but are too lazy to make?
ReplyDeleteOooh, I've never been a fan of normal quiches but those look scrummy! I'm also loving the look of the deconstructed sushi, mostly because I can never be bothered rolling my own :)

ReplyDeleteDeconstructed sushi - nice idea, saves time fannying around with sushi mats I don't have! And that tomatoey beans and spinach dish looks like the kind of food we eat A LOT of! I made a pie once out of unused pasta dough but sadly it was a little on the chewy side...
