Eat a rainbow

You don't need skittles or other yucky candy to taste the full range of colours... all you need is some fruit and veg. Here is some of the colourful and wintry food we've been eating.

Avocado, tomato, cucumber and raw corn salad. Avocadoes are at the peak of amazingness right now, and they are so creamy and good that we've been having them at least once a day (on the weekend we had avocado for breakfast, lunch, and dinner).

Green zucchini, sauteed with oil, salt and pepper; a grilled tomato half; eggplant bharta; and purple potato patties (purple sweet potatoes mashed with corn and coriander).
More purple potatoes, paired this time with japanese pumpkin and a spinach-cream sauce to make lasagne.
Leftover lasagne made a reappearance the next night, along with some bright red, juicy tomatoes stuffed with silverbeet (swiss chard), carrot and breadcrumbs.
And when you need some hot pink in your life, try some grapefruit juice.
Now, the only colour I'm missing is blue... but it's been so cold that my fingers and toes are maybe a little blue. Okay, I'm exaggerating a little, but it's cold enough that my normally liquid coconut oil under the bathroom sink has turned completely solid--now that's cold.

Mmmmm avocado....and I'll have some of that lasagna thanks! I used purple sweet potato once, but mine came out white once I'd cooked it, I was so very sad.

And cold is when you have to sleep with your head under the doona because it hurts your nose to breathe :P

Wow, all those colours are amazing! And freshly squeezed grapefruit juice is the best. It's my favourite part about visiting my parents, although I've never squeezed the pink grapefruit before (just eaten it normally).

I agree, it's got much colder down this end of the world lately. Winter has well and truly arrived.

The salad looks wonderful! When asked what one food I would pick if I was stranded on a desert island, I always pick avocado. Love 'em!

Cold in Townsville? I don't believe you. If it's cold in Townsville then it it must be freezing here in Brisbane. :-) Without any exaggeration!

What gorgeous food you have there! Can you get avocado locally? If so, I'm wicked jealous. As I try to move towards eating more local food it will be tough to give up avocado. So tasty!

It's hard to believe it's getting colder in the southern hemisphere. My coconut oil has finally liquified--even with the AC on!

The lasagna is one of the most amazing things I've seen in a looong time. Vegetables can have amazing colors. I was cutting squash today and thinking "how can the color be so vibrant!".

I love avocados too! And that fresh grapefruit juice is enough to make my mouth water!

Cold is relative... the other night it was 8 degrees celsius, or 45 fahrenheit. In the mornings and evenings it's about 18C/64F, and during the day it's been 22C/70F. But it's the wind that's so chilly! The sun is warm, but our house doesn't get any because it's so well designed for the tropical summers...

Alec, avocados are very local. Most of the ones from the market are grown about an hour north of here or less. I wish you could freeze avocado, because they are so good now but in a few months they will be impossible to find.

I love purple potatoes! I only wish they were more available around here. I found some at the farmer's market last season, but so far, none this year. Probably still too early, I guess.

The avos here are great at the moment so are being added to everything.

Nothing like a lot colours to brighten up a winter meal. Very cold here in South Africa this winter.

I love eating a rainbow of colors. It pleases me immensly when I've got some food from each color represented.

Avocados have to be one of the best foods in the world. I wish I had an avocado tree.
