Today is the last day of the Australian version of VeganMoFo. I managed, in the space of 30 days, to get 23 posts (including this one). That's equivalent to my combined total for May, June, July and August--not bad, hey?
Before we say hello to October, and the rest of the world's VeganMoFo, I thought I would post the last few photos that have managed to hang out on my hard drive without being blogged about. They seem to all be comfort food meals, which is appropriate given the stressful day we had yesterday. Nacho had to head to the vet for a urinary tract infection. She seems to be feeling better now, so we're hoping she gets better quickly and this is a one-time thing!
Some kidney bean nuggets with gravy, roasted veggies, and a salad. I can't remember exactly when we had this, but it was a ridiculously long time ago. Anyways, I remember how good it was.
Nothing is more comfort food-ish than fluffy mashed potatoes.
Still on the potato theme, tater tots. All processed and not good for you but oh-so-tasty and crispy from the oven. Served with baked garlic-balsamic mushrooms, a salad and a bread roll.
Pasta is equally comfort foody, in my opinion. This was spaghetti bolognaise with diced vegan sausage in place of the meat, along with some spinach and grated carrot for healthfulness.
And finally, the ultimate comfort food, vegan mac & yeast. We always add veggies to our pasta, and this one had green peas, carrot and zucchini, along with a few cherry tomatoes on top. Creamy, yeasty and delicious.
Obviously I dig carbs when I'm in need of comfort food...

Congrats on 23 posts! Isn't if funny how we've all blogged heaps more than we usually would and normally once a week or two seems like an effort!
All of that food looks good to me, I'm going to miss comfort food now that the weather is warming up.
Carbs are awesome. I know I definitely crave them when I need comfort food. Vegan mac and cheez is always good...haven't made it in ages. I haven't made a lot interesting things since becoming single. Had been seeming too hard and like so much effort but your blog is always pretty inspiring with ideas and stuff...
This all looks so yummy! Is it possible to get your recipe for the bolognaise?
Bolognaise:
1 onion
a bunch of garlic cloves
2 big vegan sausages (Julie Hasson style), diced
1/2 c. frozen spinach
1 big carrot, grated
1 T. vegemite, dissolved in a bit of hot water (optional, but good. alternatively, some beef stock or soy sauce might work)
1 jar of pre-made spaghetti sauce! Alternatively, you could make whatever favourite sauce out of fresh or tinned tomatoes and herbs and other good things, but this was a lazy dinner :)
Cook onions, stir in garlic and sausage and cook until the sausage is a bit browned. Turn down the heat and add the sauce, spinach and carrot, and stir in the vegemite/water, and simmer until the pasta is cooked.
I managed 6 - more than I've done in months. Will do a mega post tonight.

It seems like the month has gone so fast, it has been really fun feeling inspired to post as often as I could, and reading everyone's posts as well!
I hope Nacho is feeling better. I feel so sorry for all the kitties I see with cystitis. Hopefully she has the happy drugs and is now on the mend!

Congrats on finishing VeganMoFo so successfully. We're just getting going on it this month and it's a lot of fun so far. The food you've made looks great!
way to go with vegan mofo! if i had more time i'd love to do it,,school usually takes away from that though.
