This is a mix-n-match Urban Vegan pie. I used the cookie crust recipe from her newest book, Pies and Tarts with Heart. I'll review it properly in October, along with a giveaway! So check back for that. But, spoiler: I love it so far.

Is it just me or are the strawberries way better than average this year? I am just eating them with yogurt and tonight there will be shortcake too! Get them while they are cheap!
Ooh, yum! This sounds fantastic Theresa. I'm not sure I've seen a vegan pie quite like this before but anything with a mousse-like filling is going to win me over.

I am loving the mixed metaphor! What a great idea. Nummers. :) Wish we had more passionfruit here. I can only get the Goya frozen pulp--bc I don't feel like spending $12 a pound for "fresh" ones.
